The brief
Chef & Spice is an Indian buffet restaurant on Hinckley Road, Leicester. Cool Stream Ventilation was appointed to design, manufacture and install a complete ventilation package for the kitchen and dining areas.
Three canopies, three jobs
- Theatre canopy — overhangs a display of dishes, letting customers watch food cooked in front of them on a wok cooker
- Island canopy — positioned over the chargrill, handling bbq meat and fish cooking
- Large wall canopy — covers the main kitchen at the rear, including a Tandoori oven, various burner ovens and Indian wok cookers
All three canopies run baffle filters along their full length, plus lighting and supply air intake — the theatre canopy draws in supply air through perforations across its front. Each canopy has its own extraction system with an individual fan and speed controller; silencers are fitted throughout to reduce noise, with anti-vibration mountings on all ductwork, air conditioning units, fans and termination cowls.
Air conditioning & kitchen fit-out
Four Daikin 14.5kW ceiling cassette air conditioning systems, each with individual controls, serve the restaurant seating area, with condensing units installed outside on a flat roof.
In the main kitchen, we fitted stainless steel wall cladding floor-to-ceiling on every wall — glued, not screwed, with stainless steel divider bars for easy cleaning. We also supplied and installed stainless steel shelving, stainless steel tables with under-shelves built to the client's exact measurements, stainless steel sinks with taps and aqua sprays, and specially designed utensil hooks. A dedicated cold room for meat storage was installed too, running from -1°C to 10°C with integral refrigeration equipment and up to three tiers of shelving.
