Case Study 3: Chef and Spice Restaurant

Coolstream Ventilation designed, manufactured and installed a hot and spicy ventilation package for Indian buffet restaurant Chef and Spice on Hinckley Road in Leicester.

The project involved three extraction canopies including a theatre canopy, an island canopy and a large wall canopy. The theatre canopy was designed to overhang an array of impressive display dishes. Customers select food from the display and watch their food being cooked in front of them by the chef on a Wok cooker. Underneath the Island canopy was the chargrille where the bbq meat and fish is cooked whilst the large wall canopy was situated in the main kitchen at the back of the restaurant. This is where the food is prepared and where the majority of cooking takes place. This large canopy was designed to cover the main cooking appliances, including the Tandoori oven, various burner ovens and Indian Wok cookers.

All three canopies feature baffle filters running their entirety. They also include lighting and supply air intake. In the theatre canopy the supply air is brought into the area by perforations in the front of the canopy itself.

Each canopy has its own extraction system consisting of its own fan and speed controller. Silencers were fitted on all systems to reduce noise levels. Anti vibration mountings on all ductwork, air conditioning units, fans and termination cowls were also installed.

As part of the project, Coolstream Ventilation installed four Daikin 14.5kW ceiling cassette air conditioning systems, each with individual controls. The indoor units serve the large restaurant seating area. The condensing units were installed outside on a flat roof.

In the main kitchen stainless steel wall cladding was fitted on every wall from floor to ceiling. The cladding was glued to the walls and featured stainless steel divider bars so that no screws were required for easy cleaning.

Coolstream Ventilation supplied and installed stainless steel shelving to the restaurant owner’s requirements in the main kitchen. Also stainless steel tables, complete with shelves below, were supplied to the client’s specific measurements both in the restaurant and kitchen. Coolstream Ventilation supplied specially manufactured stainless steel sinks complete with taps and aqua sprays in the kitchen too, whilst specially designed utensil hooks completed the tidy, clean and modern look of the kitchen.

Finally, one cold room was supplied and installed for the storage of meat at -1 degrees Celsius to 10 degrees Celsius. It included integral refrigeration equipment and the maximum amount of three tier shelving.
